Introduction

The quality of beef meatballs is a crucial factor in determining their acceptability and nutritional value. Various factors can affect the quality of meatballs, including the type of ingredients used, storage conditions, and handling practices. In this study, we examined the effect of the addition of nuts and the length of storage on the quality of beef meatballs. The study was conducted at the Technology Laboratory, Department of Agriculture Technology, Faculty of Agriculture, University of North Sumatra, from June to September 2008.

Methodology

This study used a complete factorial (RAL) complete design with two factors. The first factor was the type of nuts, which consisted of three types: green beans (K1), peanuts (K2), and peas (K3). The second factor was storage time, with five levels: without storage (L1), 2 weeks (L2), 4 weeks (L3), 6 weeks (L4), and 8 weeks (L5). Each treatment combination was repeated twice, with three repetition meatball samples.

Results

The results showed a very significant difference (p <0.01) in the content of protein, fat, and meatball carbohydrates. The addition of nuts and the length of storage did not show a significant difference (P> 0.5) to the texture and taste of meatballs.
