Introduction

The use of fish protein hydrolysis (HPI) combined with gracilaria sp. has been gaining attention in recent years as a promising innovation in the development of active food packaging. The mixture is then heated using a stirrer at 60 °C and dried in an oven at 50 °C for 24 hours. The resulting edible film is then analyzed using FT-IR (Fourier Transform Infrared Spectroscopy) to determine its chemical composition and structure.
